Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1/4 cup tequila
- 2 limes, juiced
- 2 cloves garlic, minced
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1/2 cup sour cream
- 1/4 cup shredded cheddar cheese
- Lime wedges for garnish
Instructions:
In a bowl, combine tequila, lime juice, minced garlic, cayenne pepper, salt, and black pepper to make the marinade
Add shrimp to the marinade and refrigerate for 15-30 minutes
Heat olive oil in a skillet over medium-high heat
Remove shrimp from the marinade and cook in the skillet for 2-3 minutes per side until they turn pink and opaque
Remove from heat
Warm the tortillas in a dry skillet or microwave for about 30 seconds
Assemble the tacos by placing a few shrimp on each tortilla
Top with shredded lettuce, diced tomatoes, red onion, cilantro, sour cream, and cheddar cheese
Garnish with lime wedges and serve immediately
