Ingredients:
- 1 cup cooked quinoa
- 2 cups chopped kale
- 1 can black beans, rinsed and drained
- 1 red bell pepper, diced
- 1/4 cup chopped red onion
- 1 jalapeno, seeded and minced
- 1/4 cup chopped cilantro
- 1/4 cup lime juice
- 1 tablespoon maple syrup
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions:
In a large bowl, combine cooked quinoa, chopped kale, black beans, diced red bell pepper, chopped red onion, minced jalapeno, and chopped cilantro
In a small bowl, whisk together lime juice, maple syrup, ground cumin, chili powder, salt, and pepper
Pour the dressing over the salad and toss until well combined
